The Spice Circuit is very excited to be back at Darjeeling Express and this time we will be bringing you recipes from the family kitchens of Chef Kanthi.
Andhra Pradesh is an ever enchanting state, which is all the more famous for its cuisine. Spiciest of all the Indian cuisines, the cuisine of Andhra has many delicacies to boast of. Unfortunately, there are not many restaurants in the UK to showcase the cuisine of this region. Here is the menu that has been put together with hand-picked recipes from home kitchens.
MENU
NIMMAKAAYA RASAM AND VADIYAALU
Lemon flavoured broth infused with ginger, coriander, pepper and tomatoes. Served with crispy sago crackers
GUNTUR MIRCHI BAJJI
A favourite street food snack. Big dutch chillies stuffed with tamarind, ajwain, coriander and roasted Daria daal, dipped in a gram flour batter and deep fried. Served with a sweet and spicy ginger chutney
ANDHRA CHILLI CHICKEN
This chicken dish is very popular not only in Andhra but neighbouring states too. Boneless chicken marinated in a green chilli and herb paste, pan-fried and finished with lime juice and curry leaves
NELLORE CHAPALA PULUSU
Haddock fillets simmered in a spicy and sour sauce made of tamarind, raw mango, coriander, mustard and fenugreek
Served with -Rice, Pappu Chaaru(a daal and vegetable stew), Bangaladumpa Vepudutempered potatoes),
Andhra pickles and chutneys
SAGGUBIYYAM SEMIYA PAYASAM
This one is my personal favourite from my mother’s kitchen as she makes it for my birthday every year. Rice Pudding made out of tapioca balls and vermicelli finished with raisins and cashew nuts.
